Description

A delightful side dish of tender, sweet carrots caramelized and glazed with honey and balsamic vinegar.


Ingredients

  • 1 lb. fresh carrots
  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste
  • ¼ cup goat cheese, crumbled (optional)

Instructions

  1. Preheat your oven to 425°F.
  2. Slice both ends off each carrot and cut into 1½ inch pieces.
  3. In a small bowl, whisk together 1 Tbsp balsamic vinegar, 1 Tbsp honey, and oil.
  4. Pour the glaze over the carrots, add garlic, thyme, salt, and pepper, and toss to coat.
  5. Transfer carrots to a baking sheet lined with parchment paper.
  6. Roast for 20-25 minutes, brushing with reserved glaze halfway through.
  7. Drizzle remaining glaze over roasted carrots and toss gently.
  8. Optionally, sprinkle with goat cheese before serving.

Notes

For added flavor, consider a splash of orange juice or a pinch of red pepper flakes. Keep an eye on the carrots while roasting to avoid overcooking.
