Description
A delightful side dish of tender, sweet carrots caramelized and glazed with honey and balsamic vinegar.
Ingredients

- 1 lb. fresh carrots
- 1 Tbsp avocado oil (or olive oil)
- 2 Tbsp balsamic vinegar
- 2 Tbsp honey
- 2 garlic cloves, minced
- 1 tsp dried thyme
- ¼ tsp salt
- Cracked black pepper, to taste
- ¼ cup goat cheese, crumbled (optional)
Instructions
- Preheat your oven to 425°F.
- Slice both ends off each carrot and cut into 1½ inch pieces.
- In a small bowl, whisk together 1 Tbsp balsamic vinegar, 1 Tbsp honey, and oil.
- Pour the glaze over the carrots, add garlic, thyme, salt, and pepper, and toss to coat.
- Transfer carrots to a baking sheet lined with parchment paper.
- Roast for 20-25 minutes, brushing with reserved glaze halfway through.
- Drizzle remaining glaze over roasted carrots and toss gently.
- Optionally, sprinkle with goat cheese before serving.
Notes
For added flavor, consider a splash of orange juice or a pinch of red pepper flakes. Keep an eye on the carrots while roasting to avoid overcooking.
