- 4 bone-in, skin-on chicken thighs
- 2 medium zucchinis, sliced
- 1/4 cup hot honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon crushed red pepper flakes (optional)
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Line a sheet pan with parchment paper or lightly grease it.
- In a bowl, combine hot honey, minced garlic, soy sauce, olive oil, salt, black pepper, paprika, and crushed red pepper flakes to make the marinade.
- Place the chicken thighs in a bowl or bag and pour half the marinade over them, ensuring they are well coated.
- Slice the zucchinis into half-moons and place on the prepared sheet. Drizzle remaining marinade over the zucchini and toss to coat.
- Place the chicken thighs skin-side up on the sheet pan with the zucchini.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
- Optional: Broil for an additional 2-3 minutes to crisp the chicken skin.
- Let the chicken rest for a few minutes before serving.
- Garnish with freshly chopped parsley before serving.
