Ingredients

  • 1 pound fresh green beans, trimmed

  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: fresh parsley or toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and trim the green beans and slice the carrots.
  2. In a small bowl, combine olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper; whisk until emulsified.
  3. Toss the carrot pieces and green beans in the honey glaze until generously coated.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 20-25 minutes, checking for doneness at 20 minutes.
  6. If desired, turn on the broiler for 1-2 minutes to caramelize the edges.
  7. Let the vegetables rest for a minute before garnishing with parsley or sesame seeds.
