  • 1 lime (juiced)

Instructions

  1. Cook the rice according to the package instructions until light and fluffy.
  2. In a medium bowl, mix together lime juice, honey, olive oil, salt, and pepper until well combined.
  3. Place the chicken breasts in the marinade, ensuring they are fully coated. Let it marinate for at least 30 minutes.
  4. Grill or pan-sear the chicken over medium heat until it reaches an internal temperature of 165°F (75°C), about 6-7 minutes per side. Let it rest before slicing.
  5. Halve the avocado, remove the pit, and slice it into thin pieces.
  6. Assemble the stacks by spooning cooked rice onto a plate, followed by a layer of sliced chicken, and then the avocado.
  7. Sprinkle fresh cilantro on top and serve immediately.

Notes
