Delicious cupcakes featuring a rich cream cheese base, sweet honey, and fresh peaches, perfect for any occasion.
Ingredients
Scale
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- 8 oz cream cheese (softened)
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup honey
- 1 cup fresh peaches (finely chopped)
- 8 oz cream cheese (softened, for frosting)
- ½ cup unsalted butter (softened, for frosting)
- 2 cups powdered sugar
- 2 Tbsp honey (for frosting)
- ½ tsp vanilla extract (for frosting)
- Peach slices (for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with colorful liners or grease the cups.
- In a mixing bowl, whisk together the flour, baking powder, and salt; set aside.
- In a separate bowl, cream together the softened butter, cream cheese, and sugar until pale and fluffy.
- Add the eggs one at a time, mixing until incorporated, then stir in the vanilla extract and honey.
- Gently fold the dry mixture into the wet until just combined, then fold in the finely chopped peaches.
- Divide the batter among the muffin cups, filling each about ¾ full. Bake for 18–22 minutes or until a toothpick comes out clean.
- Cool completely in the tin before frosting.
- For the frosting, beat together cream cheese and butter until creamy. Gradually blend in powdered sugar, honey, and vanilla.
- Pipe or spread the frosting on cooled cupcakes, topping each with a peach slice and a drizzle of honey.
Notes
Overbaking can lead to dry cupcakes. Ensure butter and cream cheese are softened for smooth frosting.
