  • 2 cups powdered sugar
  • 2 Tbsp honey (for frosting)
  • ½ tsp vanilla extract (for frosting)
  • Peach slices (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with colorful liners or grease the cups.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt; set aside.
  3. In a separate bowl, cream together the softened butter, cream cheese, and sugar until pale and fluffy.
  4. Add the eggs one at a time, mixing until incorporated, then stir in the vanilla extract and honey.
  5. Gently fold the dry mixture into the wet until just combined, then fold in the finely chopped peaches.
  6. Divide the batter among the muffin cups, filling each about ¾ full. Bake for 18–22 minutes or until a toothpick comes out clean.
  7. Cool completely in the tin before frosting.
  8. For the frosting, beat together cream cheese and butter until creamy. Gradually blend in powdered sugar, honey, and vanilla.
  9. Pipe or spread the frosting on cooled cupcakes, topping each with a peach slice and a drizzle of honey.
