Description

A delicious and comforting bowl combining tender chicken, vibrant mixed vegetables, and a sweetly spicy honey sauce.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice

Instructions

  1. Gather ingredients and chop vegetables.
  2. Pat chicken dry and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes on each side.
  4. In a bowl, mix hot honey, soy sauce, and lime juice.
  5. Pour sauce over chicken, coat, and let flavors meld.
  6. Add mixed vegetables and stir for a few minutes.
  7. Serve over rice or quinoa, drizzling with additional sauce.

Notes

Ensure not to overcrowd the skillet for a perfect sear. Customize the heat level of your hot honey by adjusting the chili infusion.
