Description

A classic banana bread recipe that combines ripened bananas and a hint of coconut for a warm, nostalgic treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut milk
  • 3 ripe bananas, mashed
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, stir together the melted butter and sugar until combined. Add the eggs one at a time, mixing well in between. Then, stir in the vanilla extract and the coconut milk.
  4. Mash the ripe bananas and stir them into the wet mixture.
  5. Carefully fold the dry ingredients into the wet mixture, then mix in the shredded coconut and macadamia nuts.
  6. Pour the batter into the greased loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Once baked, let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For a lighter version, swap granulated sugar for honey or maple syrup, and use whole wheat flour or almond milk for healthier alternatives.
