A classic banana bread recipe that combines ripened bananas and a hint of coconut for a warm, nostalgic treat.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup coconut milk
- 3 ripe bananas, mashed
- 1/2 cup shredded coconut
- 1/2 cup chopped macadamia nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a mixing bowl, whisk together the flour, baking soda, and salt.
- In another bowl, stir together the melted butter and sugar until combined. Add the eggs one at a time, mixing well in between. Then, stir in the vanilla extract and the coconut milk.
- Mash the ripe bananas and stir them into the wet mixture.
- Carefully fold the dry ingredients into the wet mixture, then mix in the shredded coconut and macadamia nuts.
- Pour the batter into the greased loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Once baked, let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
For a lighter version, swap granulated sugar for honey or maple syrup, and use whole wheat flour or almond milk for healthier alternatives.
