Description

A fluffy, tender, and guilt-free bread that is perfect for low-carb diets.


Ingredients

Scale
  • 1 cup full-fat cottage cheese
  • 1/3 cup unflavored whey protein isolate
  • 4 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon aluminum-free baking powder
  • Optional herbs (rosemary, garlic powder, or Italian seasoning)

Instructions

  1. Set out all ingredients 30 minutes before starting.
  2. Preheat oven to 300°F.
  3. Separate eggs carefully.
  4. Add cream of tartar to egg whites and whip until stiff peaks form.
  5. Blend cottage cheese until smooth.
  6. Gradually incorporate whey protein powder, salt, and egg yolks.
  7. Fold one third of the whipped egg whites into the protein mixture.
  8. Spoon mixture onto parchment-lined baking sheets in 8 even circles.
  9. Smooth tops gently.
  10. Bake for 25-30 minutes until golden brown.
  11. Allow to cool completely.
  12. Store in an airtight container in the refrigerator for up to 5 days.
