Ingredients

- 2 slices sourdough bread
- 1/2 cup chopped kimchi
- 2 slices sharp cheddar cheese
- 1 tablespoon unsalted butter
- 1 teaspoon gochujang (optional)
- 1 tablespoon mayonnaise
Instructions
- Spread mayonnaise on the outside of each slice of sourdough bread.
- If desired, mix gochujang into the chopped kimchi for added heat.
- On the unbuttered side of one slice, layer one slice of cheddar cheese, followed by kimchi, and top with another slice of cheddar.
- Place the other slice of bread on top with the mayo side facing out.
- Heat a skillet over medium heat and melt the butter.
- Place the sandwich in the skillet and cook each side for about 3-4 minutes, pressing gently with a spatula.
- Once toasted and melted, remove from skillet, slice in half, and serve hot.
Notes
Experiment with different cheeses or bread types for varied flavor profiles. Serve with tomato soup for a classic pairing.
