- 1 (9-ounce) package brownie mix
- 1 egg
- 1 tablespoon cold water
- 1 (14-ounce) package individually wrapped caramels
- 1 (5-ounce) can evaporated milk
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 1 teaspoon vanilla bean paste
- 2 eggs
- 1 cup chocolate fudge topping
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix brownie mix, 1 egg, and cold water until combined; spread into the greased pan.
- Bake brownie layer for 25 minutes until set; a toothpick should come out clean.
- In a saucepan, melt the caramels with evaporated milk until smooth; reserve 1/3 cup for later.
- Pour remaining caramel over the warm brownie crust.
- Beat cream cheese, sugar, and vanilla until smooth; add eggs one at a time until mixed.
- Pour cheesecake mixture over the caramel layer and bake for 40 minutes or until edges are set.
- Cool the cheesecake completely in the pan before removing the rim.
- Drizzle reserved caramel and chocolate fudge topping on top before serving.
