Ingredients

  • 1 tablespoon cold water
  • 1 (14-ounce) package individually wrapped caramels
  • 1 (5-ounce) can evaporated milk
  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 1 teaspoon vanilla bean paste
  • 2 eggs
  • 1 cup chocolate fudge topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix brownie mix, 1 egg, and cold water until combined; spread into the greased pan.
  3. Bake brownie layer for 25 minutes until set; a toothpick should come out clean.
  4. In a saucepan, melt the caramels with evaporated milk until smooth; reserve 1/3 cup for later.
  5. Pour remaining caramel over the warm brownie crust.
  6. Beat cream cheese, sugar, and vanilla until smooth; add eggs one at a time until mixed.
  7. Pour cheesecake mixture over the caramel layer and bake for 40 minutes or until edges are set.
  8. Cool the cheesecake completely in the pan before removing the rim.
  9. Drizzle reserved caramel and chocolate fudge topping on top before serving.
