Description

A delightful combination of zesty lemon and juicy blueberries in a creamy filling, nestled in a buttery shortbread crust.


Ingredients

  • 1 teaspoon cornstarch
  • 2 teaspoons lemon juice
  • 1 cup fresh or frozen blueberries
  • 2 teaspoons granulated sugar
  • 1 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 (14 ounce) can full-fat sweetened condensed milk
  • 6 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 large egg yolk
  • Optional Garnishes: Lemon slices, additional blueberries, leftover blueberry sauce, whipped cream

Instructions

  1. In a small bowl, combine cornstarch and lemon juice. In a saucepan, warm the blueberries and granulated sugar over medium heat for about 3 minutes, stirring occasionally and gently mashing the blueberries. Stir in the cornstarch mixture and cook for another 2 minutes until thickened. Remove from heat and set aside.
  2. Preheat your oven to 350°F (175°C).
  3. In a mixing bowl, combine melted butter, additional granulated sugar, vanilla extract, and salt. Gradually add the flour, mixing until fully combined. Press the dough into a 9-inch tart pan and bake for 15 minutes, ensuring to poke holes in the crust to prevent bubbling.
  4. In another bowl, whisk together sweetened condensed milk, lemon juice, lemon zest, and egg yolk. Pour the filling into the warm crust and drop spoonfuls of blueberry sauce on top, swirling gently.
  5. Bake for 17-19 minutes, or until the filling is set.
  6. Allow the tart to cool completely before chilling in the refrigerator for at least 2 hours.
  7. Serve chilled with optional garnishes like lemon slices, fresh blueberries, leftover blueberry sauce, or whipped cream.

Notes

Feel free to make the crust in advance and chill it. Can be stored in the fridge for 4-5 days.
