- 2 cups cooked orzo pasta
- 1 lb chicken breast, diced
- 1 cup broccoli florets
- 1 cup bell peppers, diced
- 1 carrot, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat and add diced chicken. Season with salt and pepper; cook until browned and fully cooked, about 7-10 minutes. Remove chicken from skillet.
- Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
- Add broccoli, bell peppers, and carrot to the skillet. Stir-fry for 5-7 minutes until tender-crisp.
- Return the cooked chicken and add prepared orzo, soy sauce, lemon juice, salt, and pepper. Stir until heated through, about 2-3 minutes.
- Remove from heat and garnish with fresh parsley before serving.
Notes
Use fresh ingredients for better flavor. You can customize the vegetables based on preference. Leftovers can be stored for up to 3 days.
