Instructions
- In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well to ensure ingredients are evenly distributed.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or ideally overnight.
- After the chia pudding has set, give it a stir to break up any clumps.
- In a separate bowl, mix the lemon curd and lemon zest until well combined.
- To assemble, spoon a layer of chia pudding into serving glasses or bowls, followed by a layer of lemon curd mixture. Repeat layers until filled.
- Top with fresh berries and garnish with mint leaves if desired.
- Serve immediately or refrigerate for a few more hours to allow flavors to meld.
Notes
For extra creaminess, replace almond milk with coconut milk. You can also experiment with other fruit curds.
