Ingredients

  • 1/2 cup lemon curd (store-bought or homemade)
  • Zest of 1 lemon
  • Fresh berries (for topping, optional)
  • Mint leaves (for garnish, optional)

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk well to ensure ingredients are evenly distributed.
  2. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours or ideally overnight.
  3. After the chia pudding has set, give it a stir to break up any clumps.
  4. In a separate bowl, mix the lemon curd and lemon zest until well combined.
  5. To assemble, spoon a layer of chia pudding into serving glasses or bowls, followed by a layer of lemon curd mixture. Repeat layers until filled.
  6. Top with fresh berries and garnish with mint leaves if desired.
  7. Serve immediately or refrigerate for a few more hours to allow flavors to meld.

Notes

For extra creaminess, replace almond milk with coconut milk. You can also experiment with other fruit curds.
