- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest

- 1 cup powdered sugar (for glaze)
- 2 tablespoons fresh lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, lining the bottom with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy.
- Add in the eggs, lemon zest, fresh lemon juice, and vanilla extract, and beat until fully combined.
- Gradually incorporate the flour mixture into the wet mix and gently fold until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack. Whisk together the powdered sugar and fresh lemon juice for the glaze and drizzle over the cooled loaf.
Notes
Ensure butter and eggs are at room temperature for a smoother batter. Allow the loaf to cool properly to avoid a soggy bottom.
