Ingredients

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest

  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan, lining the bottom with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the softened unsalted butter and granulated sugar together until light and fluffy.
  4. Add in the eggs, lemon zest, fresh lemon juice, and vanilla extract, and beat until fully combined.
  5. Gradually incorporate the flour mixture into the wet mix and gently fold until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack. Whisk together the powdered sugar and fresh lemon juice for the glaze and drizzle over the cooled loaf.
