- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1/4 cup grated Parmesan cheese (optional)
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil, for frying
Instructions
- In a large mixing bowl, combine ground chicken, minced garlic, fresh rosemary, lemon zest, lemon juice, breadcrumbs, Parmesan cheese (if using), egg, salt, and pepper.
- Mix thoroughly until all ingredients are well incorporated.
- Shape the mixture into patties roughly 2 inches in diameter and ½ inch thick.
- Heat a generous drizzle of olive oil in a large skillet over medium heat.
- Fry the patties in small batches for about 5-6 minutes per side until golden brown and fully cooked (internal temperature of 165°F or 74°C).
- Transfer cooked patties to a paper towel-lined plate to drain excess oil.
- Serve hot or at room temperature.
Notes
For a gluten-free option, use gluten-free breadcrumbs. These patties freeze well, so feel free to double the batch for meal prep.
