Description

Ingredients

  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil, for frying

Instructions

  1. In a large mixing bowl, combine ground chicken, minced garlic, fresh rosemary, lemon zest, lemon juice, breadcrumbs, Parmesan cheese (if using), egg, salt, and pepper.
  2. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the mixture into patties roughly 2 inches in diameter and ½ inch thick.
  4. Heat a generous drizzle of olive oil in a large skillet over medium heat.
  5. Fry the patties in small batches for about 5-6 minutes per side until golden brown and fully cooked (internal temperature of 165°F or 74°C).
  6. Transfer cooked patties to a paper towel-lined plate to drain excess oil.
  7. Serve hot or at room temperature.

Notes

For a gluten-free option, use gluten-free breadcrumbs. These patties freeze well, so feel free to double the batch for meal prep.
