Description

A rich and creamy Mango Pudding that captures the essence of tropical flavors in every bite.


Ingredients

  • 12 oz ripe mangoes
  • 2 tbsp cold water
  • 1.5 tbsp gelatin (or 1.5 tsp agar agar powder for a plant-based alternative)
  • 1.5 tbsp white granulated sugar
  • 0.54 cups full-fat coconut milk
  • 4 tbsp evaporated milk (or additional coconut milk)

Instructions

  1. Blend the mango until smooth. Strain through a fine mesh sieve for a velvety texture.
  2. Activate the gelatin by combining cold water and gelatin in a small bowl.
  3. In a saucepan over low heat, mix sugar, coconut milk, and mango puree, whisking until smooth.
  4. Stir in the bloomed gelatin mixture carefully over low heat until dissolved.
  5. Pour the mixture into individual serving bowls or molds.
  6. Refrigerate for at least six hours or overnight for best results.
  7. Serve with a drizzle of evaporated milk or additional coconut milk.

Notes

Use perfectly ripe mangoes for best flavor. Avoid overheating to maintain pudding texture.
