- 1/2 cup blueberries (optional)
- 1/2 cup powdered sugar
- 1/4 cup maple syrup
- 2 tbsp milk
Instructions
- Preheat your oven to 350°F (175°C).
- Lightly grease a mini muffin pan with butter or cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg, then add buttermilk, vanilla extract, and melted butter; mix until smooth.
- Pour wet ingredients into dry ingredients and fold gently, being careful not to overmix.
- If desired, fold in mini chocolate chips or blueberries.
- Fill each mini muffin cup about three-quarters full.
- Bake for 10-12 minutes until puffed and lightly browned.
- While baking, whisk together powdered sugar, maple syrup, and milk for the glaze.
- Cool poppers in the pan for 3-5 minutes before removing.
- Drizzle with maple glaze and serve warm.

For healthier alternatives, consider using whole wheat flour, unsweetened applesauce, and low-sugar maple syrup.
