Description

Ingredients

  • 4 chicken leg quarters
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garam masala
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt to taste
  • Fresh cilantro for garnish
  • Lemon wedges for serving

Instructions

  1. In a large bowl, combine yogurt, lemon juice, vegetable oil, cumin, coriander, garam masala, paprika, turmeric, cayenne pepper, garlic, ginger, and salt to create the marinade.
  2. Score the chicken pieces with shallow cuts for better marinade absorption.
  3. Coat the chicken thoroughly with the marinade and refrigerate for at least 1 hour, preferably overnight.
  4. Preheat the oven to 425°F (220°C) or grill as desired.
  5. Line a baking sheet with foil and place a wire rack on top.
  6. Arrange the marinated chicken on the rack with space between pieces.
  7. Bake for 30-40 minutes or until cooked through and internal temperature reaches 165°F (75°C).
  8. Turn halfway through for even browning.
  9. Let the chicken rest for a few minutes before serving.
  10. Garnish with fresh cilantro and serve with lemon wedges.

Notes
