Ingredients

- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 2 cups frozen spinach
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot over medium heat, drizzle in olive oil and warm it up.
- Add the chopped onion and minced garlic to the pot, sautéing for about 5 minutes or until the onion is soft and translucent.
- Incorporate the ground cumin and paprika and cook for another minute.
- Add the drained chickpeas, diced tomatoes, and vegetable broth, stirring well and bringing to a boil.
- Reduce the heat and let the soup simmer for 15 minutes.
- Stir in the frozen spinach and cook until heated through.
- Taste and season with salt and pepper, then serve warm.
Notes
Try adding fresh herbs as a garnish and consider doubling the recipe for meal prep.
