Description

A comforting and flavorful chickpea soup infused with Mediterranean spices and fresh vegetables, perfect for any occasion.


Ingredients

Scale
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 cups frozen spinach
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot over medium heat, drizzle in olive oil and warm it up.
  2. Add the chopped onion and minced garlic to the pot, sautéing for about 5 minutes or until the onion is soft and translucent.
  3. Incorporate the ground cumin and paprika and cook for another minute.
  4. Add the drained chickpeas, diced tomatoes, and vegetable broth, stirring well and bringing to a boil.
  5. Reduce the heat and let the soup simmer for 15 minutes.
  6. Stir in the frozen spinach and cook until heated through.
  7. Taste and season with salt and pepper, then serve warm.

Notes

Try adding fresh herbs as a garnish and consider doubling the recipe for meal prep.
