  • 2 cups Roasted Corn (frozen, canned, or fresh grilled)
  • 2 Fresh Jalapeños, chopped
  • 1/4 cup Freshly Squeezed Lime Juice
  • 1/4 cup Fresh Cilantro, finely chopped
  • 4 cups Low Sodium Chicken Broth
  • 1 tsp Cumin
  • 2 tsp Chili Powder
  • 8 oz Softened Cream Cheese

Instructions

  1. Prep Your Ingredients: Dice the chicken, chop the garlic and jalapeños, and measure the other ingredients.
  2. Sauté the Chicken: In a large pot over medium heat, sauté the diced chicken until golden brown (about 5-7 minutes).
  3. Add Aromatics: Toss in the minced garlic and chopped jalapeños; cook for about 30 seconds until fragrant.
  4. Pour in the Broth: Add chicken broth, drained white beans, and roasted corn; stir and let simmer.
  5. Season It Up: Add cumin and chili powder; let simmer for around 15 minutes.
  6. Incorporate the Creaminess: Stir in the softened cream cheese until melted.
  7. Finish with Freshness: Add lime juice and cilantro just before serving.
