- 2 large eggs
- 1 tsp cinnamon

- Extra cinnamon sugar for dusting
Instructions
- Preheat your oven to 325°F (165°C). Line a muffin tin with paper liners.
- Prepare the crust: Mix together crushed cookies, granulated sugar, and melted butter. Press into muffin liners and bake for 5 minutes.
- Make the cheesecake filling: Beat cream cheese until smooth, then add granulated sugar, eggs, vanilla extract, and cinnamon.
- Create the cinnamon swirl: Combine brown sugar, cinnamon, and melted butter.
- Assemble the cheesecakes: Pour cheesecake batter into muffin liners, swirl cinnamon mixture on top.
- Bake for 18–22 minutes until centers are set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 3 hours.
- Top with whipped cream or frosting and sprinkle with cinnamon sugar before serving.
