- 2 (6 oz) fresh cod fillets
- 3 tbsp white miso paste
- 2 tbsp pure maple syrup
- 1 tbsp rice vinegar
- 1 cup broccolini
- 1 tsp sesame oil
- 2 garlic cloves, minced
- 2 tbsp low-sodium soy sauce
- 2 green onions, chopped
- Cilantro (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the miso paste, maple syrup, rice vinegar, soy sauce, minced garlic, and sesame oil until smooth.
- Place the cod fillets on the prepared baking sheet, brush half of the marinade over the top, and let marinate for 30 minutes.
- Blanch the broccolini in boiling salted water for 2-3 minutes, then transfer to ice water.
- Arrange the blanched broccolini around the cod, brush with remaining marinade, and bake for 15-20 minutes or until the fish flakes easily.
- Garnish with chopped green onions and cilantro, then serve.
Notes
For deeper flavor, marinate the cod for a few hours or overnight. Substitutes for broccolini include asparagus or bok choy.
