Description

A harmonious dish of succulent cod glazed with a rich, umami-packed miso marinade and served with vibrant broccolini.


Ingredients

  • 2 (6 oz) fresh cod fillets
  • 3 tbsp white miso paste
  • 2 tbsp pure maple syrup
  • 1 tbsp rice vinegar
  • 1 cup broccolini
  • 1 tsp sesame oil
  • 2 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, chopped
  • Cilantro (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the miso paste, maple syrup, rice vinegar, soy sauce, minced garlic, and sesame oil until smooth.
  3. Place the cod fillets on the prepared baking sheet, brush half of the marinade over the top, and let marinate for 30 minutes.
  4. Blanch the broccolini in boiling salted water for 2-3 minutes, then transfer to ice water.
  5. Arrange the blanched broccolini around the cod, brush with remaining marinade, and bake for 15-20 minutes or until the fish flakes easily.
  6. Garnish with chopped green onions and cilantro, then serve.

Notes

For deeper flavor, marinate the cod for a few hours or overnight. Substitutes for broccolini include asparagus or bok choy.
