- 100 g brown sugar
- 50 g granulated sugar
- 1 egg, room temperature
- 190 g all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla bean paste
- 130 g chocolate chips
- 130 g dark chocolate, semi-sweet
- 120 g unsalted butter, for the brownie layer
- 3 eggs, room temperature
- 150 g granulated sugar
- 100 g brown sugar, for the brownie layer
- 33 g cocoa powder, Dutch processed
- 90 g all-purpose flour, for the brownie layer
- 16 pieces Oreos
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch brownie pan and line it with parchment paper.
- Prepare the cookie dough: Cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla bean paste, then combine gently with flour, baking soda, and salt. Fold in the chocolate chips and spread evenly in the pan. Layer with Oreos and refrigerate for 30 minutes.
- Melt the dark chocolate and remaining unsalted butter together until combined, then cool slightly.
- In a separate bowl, whisk the eggs, granulated sugar, and brown sugar until pale and fluffy. Gradually add the cooled melted chocolate while mixing.
- Combine the batter: Fold in cocoa powder and all-purpose flour until just combined.
- Pour the brownie batter over the Oreo layer and cookie dough. Bake for 35-40 minutes until edges are set but center is gooey.
- Cool completely before slicing into squares.
Notes
For extra indulgence, swirl peanut butter or caramel into the brownie batter before baking. Add a sprinkle of sea salt on top before baking to enhance the flavors.
