Description

A comforting and satisfying Mushroom and Spinach Lasagna filled with layers of earthy mushrooms, vibrant spinach, rich marinara sauce, and creamy cheeses, perfect for family dinners.


Ingredients

Scale
  • 9 Lasagna noodles
  • 2 tablespoons Olive oil
  • 1 Chopped onion
  • 2 cloves Minced garlic
  • 8 oz Sliced mushrooms
  • 4 cups Fresh spinach
  • 15 oz Ricotta cheese
  • 1 Egg
  • 2 cups Marinara sauce
  • 2 cups Shredded mozzarella cheese
  • 1/2 cup Grated Parmesan cheese
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions; drain and set aside.
  3. In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes translucent.
  4. Add the sliced mushrooms to the pan and cook until softened. Fold in fresh spinach and cook until wilted. Season with salt and pepper.
  5. In a separate bowl, mix ricotta cheese with egg, salt, and pepper.
  6. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  7. Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture, half of the mushroom and spinach mixture, a third of the mozzarella, and a layer of marinara sauce.
  8. Repeat the layering process with another 3 noodles and remaining ingredients.
  9. Finish with the last layer of noodles, the remaining marinara sauce, mozzarella, and sprinkle Parmesan cheese on top.
  10. Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes.
  11. Allow to cool for a few minutes before slicing.

Notes

For added flavor, incorporate herbs or make the lasagna ahead of time to let the flavors meld.
