Description
A comforting and satisfying Mushroom and Spinach Lasagna filled with layers of earthy mushrooms, vibrant spinach, rich marinara sauce, and creamy cheeses, perfect for family dinners.

- 9 Lasagna noodles
- 2 tablespoons Olive oil
- 1 Chopped onion
- 2 cloves Minced garlic
- 8 oz Sliced mushrooms
- 4 cups Fresh spinach
- 15 oz Ricotta cheese
- 1 Egg
- 2 cups Marinara sauce
- 2 cups Shredded mozzarella cheese
- 1/2 cup Grated Parmesan cheese
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions; drain and set aside.
- In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Sauté until the onion becomes translucent.
- Add the sliced mushrooms to the pan and cook until softened. Fold in fresh spinach and cook until wilted. Season with salt and pepper.
- In a separate bowl, mix ricotta cheese with egg, salt, and pepper.
- Spread a thin layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture, half of the mushroom and spinach mixture, a third of the mozzarella, and a layer of marinara sauce.
- Repeat the layering process with another 3 noodles and remaining ingredients.
- Finish with the last layer of noodles, the remaining marinara sauce, mozzarella, and sprinkle Parmesan cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes.
- Allow to cool for a few minutes before slicing.
Notes
For added flavor, incorporate herbs or make the lasagna ahead of time to let the flavors meld.
