- 1 cup crunchy or creamy peanut butter
- 8 oz cream cheese, softened to room temperature
- 1 tsp vanilla extract
- 1/3 cup maple syrup or powdered sugar (to taste)
- 1 pinch fine sea salt
- 1/2 cup graham cracker or cookie crumbs
- Optional: crushed Rice Krispies, Oreos, or mini chocolate chips
- 8 oz dark chocolate, chopped for melting
- 2 tsp coconut oil
Instructions
- Beat together the peanut butter and cream cheese in a mixing bowl until smooth and fluffy.
- Add the vanilla extract, chosen sweetener, and salt; mix until combined.
- Fold in the cookie crumbs and any optional mix-ins until thick yet silky.
- Cover the bowl and refrigerate for 20-30 minutes until the mixture firms up.
- Use a cookie scoop to roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Chill the balls for an additional 10 minutes.
- Melt the dark chocolate and coconut oil together until smooth.
- Dip each ball into the melted chocolate, tapping off excess, then return to parchment.
- Chill again for 10-15 minutes until the chocolate sets. Serve or store as desired.

These bites can be frozen for up to three months or refrigerated for a week.
