Description

Creamy, sweet, and indulgent no-bake peanut butter cheesecake balls, perfect for any occasion.


Ingredients

  • 1 cup crunchy or creamy peanut butter
  • 8 oz cream cheese, softened to room temperature
  • 1 tsp vanilla extract
  • 1/3 cup maple syrup or powdered sugar (to taste)
  • 1 pinch fine sea salt
  • 1/2 cup graham cracker or cookie crumbs
  • Optional: crushed Rice Krispies, Oreos, or mini chocolate chips
  • 8 oz dark chocolate, chopped for melting
  • 2 tsp coconut oil

Instructions

  1. Beat together the peanut butter and cream cheese in a mixing bowl until smooth and fluffy.
  2. Add the vanilla extract, chosen sweetener, and salt; mix until combined.
  3. Fold in the cookie crumbs and any optional mix-ins until thick yet silky.
  4. Cover the bowl and refrigerate for 20-30 minutes until the mixture firms up.
  5. Use a cookie scoop to roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  6. Chill the balls for an additional 10 minutes.
  7. Melt the dark chocolate and coconut oil together until smooth.
  8. Dip each ball into the melted chocolate, tapping off excess, then return to parchment.
  9. Chill again for 10-15 minutes until the chocolate sets. Serve or store as desired.
