- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups mixed vegetables (such as carrots, peas, and corn)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 (16-ounce) package potato gnocchi
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the chicken pieces and cook until they are beautifully browned and cooked through. Remove the chicken from the pot and set aside.
- In the same pot, add the diced onion and fragrant garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
- Add the mixed vegetables, dried thyme, dried rosemary, salt, and pepper. Cook for an additional 3-4 minutes, stirring occasionally.
- Sprinkle the flour over the sautéed vegetables and stir until combined, cooking for about 1 minute.
- Gradually pour in the chicken broth while stirring to avoid lumps. Bring to a gentle simmer, allowing to thicken.
- Stir in the heavy cream, ensuring everything is well incorporated before returning to a simmer.
- Add the reserved cooked chicken and potato gnocchi. Cook for about 5-7 minutes, until gnocchi are tender.
- Stir in the shredded cheddar cheese until melted and creamy.
- Remove from heat and garnish with freshly chopped parsley before serving.
Notes
For a lighter version, consider using low-fat milk instead of heavy cream, and substituting chicken for turkey or tofu.
