Description

A cozy creation that combines tender chicken, soft potato gnocchi, and mixed veggies in a luscious, creamy sauce.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (such as carrots, peas, and corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 (16-ounce) package potato gnocchi
  • 1 cup shredded cheddar cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the chicken pieces and cook until they are beautifully browned and cooked through. Remove the chicken from the pot and set aside.
  3. In the same pot, add the diced onion and fragrant garlic. Sauté for about 2-3 minutes until the onion becomes translucent.
  4. Add the mixed vegetables, dried thyme, dried rosemary, salt, and pepper. Cook for an additional 3-4 minutes, stirring occasionally.
  5. Sprinkle the flour over the sautéed vegetables and stir until combined, cooking for about 1 minute.
  6. Gradually pour in the chicken broth while stirring to avoid lumps. Bring to a gentle simmer, allowing to thicken.
  7. Stir in the heavy cream, ensuring everything is well incorporated before returning to a simmer.
  8. Add the reserved cooked chicken and potato gnocchi. Cook for about 5-7 minutes, until gnocchi are tender.
  9. Stir in the shredded cheddar cheese until melted and creamy.
  10. Remove from heat and garnish with freshly chopped parsley before serving.

Notes

For a lighter version, consider using low-fat milk instead of heavy cream, and substituting chicken for turkey or tofu.
