Ingredients

- 4 cups shredded cabbage
- 1/2 cup breadcrumbs
- 1 egg (or flax egg for a vegan option)
- 1/4 cup grated cheese (optional)
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 1–2 tsp olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Shred the cabbage finely and squeeze out any excess moisture.
- In a large mixing bowl, combine the shredded cabbage, breadcrumbs, egg (or flax egg), grated cheese (if using), chopped onion, minced garlic, paprika, cumin, salt, and pepper. Stir until well mixed.
- Shape about 1/3 cup of the mixture into patties and place on the lined baking sheet.
- Brush the tops of the patties with olive oil and bake for 20-25 minutes, flipping halfway through.
- Serve warm with your desired toppings.
Notes
For a spicy kick, add hot sauce to the mixture. Consider adding quinoa or black beans for extra protein.
