Ingredients

  • 4 cups shredded cabbage
  • 1/2 cup breadcrumbs
  • 1 egg (or flax egg for a vegan option)
  • 1/4 cup grated cheese (optional)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 12 tsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Shred the cabbage finely and squeeze out any excess moisture.
  3. In a large mixing bowl, combine the shredded cabbage, breadcrumbs, egg (or flax egg), grated cheese (if using), chopped onion, minced garlic, paprika, cumin, salt, and pepper. Stir until well mixed.
  4. Shape about 1/3 cup of the mixture into patties and place on the lined baking sheet.
  5. Brush the tops of the patties with olive oil and bake for 20-25 minutes, flipping halfway through.
  6. Serve warm with your desired toppings.

Notes

For a spicy kick, add hot sauce to the mixture. Consider adding quinoa or black beans for extra protein.
