Description

Rich, creamy chocolate-covered truffles with a luscious peanut butter center, perfect for any occasion.


Ingredients

  • 6 tablespoons unsalted butter, softened to room temperature
  • 1 cup creamy peanut butter (not natural style)
  • 2 and 1/2 cups confectioners’ sugar
  • 1/2 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 12 ounces semi-sweet chocolate bars, coarsely chopped
  • 1 teaspoon vegetable oil
  • Optional: Sprinkles for topping

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
  2. Beat the softened butter with a mixer until creamy and smooth. Add the peanut butter and mix until combined.
  3. Mix in the confectioners’ sugar, vanilla extract, and salt, and beat on low until combined.
  4. Roll the peanut butter dough into 1-inch balls and place on the baking sheet; chill for 15 minutes if too soft.
  5. Refrigerate the shaped balls for at least 1 hour.
  6. Melt the chocolate and vegetable oil together.
  7. Coat each ball with the melted chocolate, then lift out and let excess chocolate drip off.
  8. Return coated balls to the baking sheet and sprinkle with optional sprinkles.
  9. Refrigerate for 30 minutes or until chocolate has set.
  10. Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 2 weeks.

Notes

These truffles can be frozen for up to three months. For variation, use crunchy peanut butter or dark chocolate.
