- 6 tablespoons unsalted butter, softened to room temperature
- 1 cup creamy peanut butter (not natural style)
- 2 and 1/2 cups confectioners’ sugar
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon salt
- 12 ounces semi-sweet chocolate bars, coarsely chopped
- 1 teaspoon vegetable oil
- Optional: Sprinkles for topping
Instructions
- Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
- Beat the softened butter with a mixer until creamy and smooth. Add the peanut butter and mix until combined.
- Mix in the confectioners’ sugar, vanilla extract, and salt, and beat on low until combined.
- Roll the peanut butter dough into 1-inch balls and place on the baking sheet; chill for 15 minutes if too soft.
- Refrigerate the shaped balls for at least 1 hour.
- Melt the chocolate and vegetable oil together.
- Coat each ball with the melted chocolate, then lift out and let excess chocolate drip off.
- Return coated balls to the baking sheet and sprinkle with optional sprinkles.
- Refrigerate for 30 minutes or until chocolate has set.
- Store in an airtight container at room temperature for 2 days or in the refrigerator for up to 2 weeks.
Notes
These truffles can be frozen for up to three months. For variation, use crunchy peanut butter or dark chocolate.
