Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1 tablespoon milk
  • 1/3 cup chocolate chips (plus more for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by lining it with cupcake liners or lightly greasing it.
  2. In a microwave-safe bowl, melt the butter and then stir in granulated sugar and brown sugar until well combined.
  3. Whisk in the eggs and vanilla extract until the mixture is smooth and uniform in appearance.
  4. In a separate bowl, blend together all-purpose flour, cocoa powder, and salt, ensuring no lumps remain.
  5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing to keep your brownies tender.
  6. Using a spoon, fill each muffin cup with the batter, making sure to fill them about 3/4 full.
  7. Bake in the preheated oven for 15-18 minutes until the tops are set and a toothpick inserted into the center comes out mostly clean.
  8. Once they are out of the oven, allow the brownie cups to cool in the pan for about 10 minutes.
  9. Meanwhile, prepare the peanut butter topping by mixing peanut butter, powdered sugar, and milk in a bowl until it’s smooth and spreadable.
  10. Spread the peanut butter mixture over the top of each brownie cup.
  11. Press additional chocolate chips into the topping and let the brownie cups set before serving.

Notes
