Instructions
- Preheat your oven to 350°F (177°C) and grease a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a medium bowl, whisk together the vegetable oil, creamy peanut butter, brown sugar, honey, eggs, milk, and vanilla.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the shredded zucchini and semi-sweet chocolate chips.
- Spread the batter into the prepared loaf pan and bake for 55-70 minutes, covering with aluminum foil halfway through if necessary.
- Let the bread cool in the pan for 1 hour before transferring it to a wire rack to cool completely.
