Description

A delightful, wholesome treat combining rich peanut butter and melted chocolate chips with hidden zucchini for added moisture and nutrition.


Ingredients

  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon

  • ½ cup creamy peanut butter
  • â…” cup packed light or dark brown sugar
  • â…“ cup honey
  • 2 large eggs at room temperature
  • â…“ cup milk at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups shredded zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (177°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a medium bowl, whisk together the vegetable oil, creamy peanut butter, brown sugar, honey, eggs, milk, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the shredded zucchini and semi-sweet chocolate chips.
  6. Spread the batter into the prepared loaf pan and bake for 55-70 minutes, covering with aluminum foil halfway through if necessary.
  7. Let the bread cool in the pan for 1 hour before transferring it to a wire rack to cool completely.
