Description

Chewy and nutty peanut butter oat bars that evoke nostalgia and are perfect for snacking.


Ingredients

Scale
  • 1/4 cup honey
  • 1/4 cup natural peanut butter
  • 1 1/2 cups rolled oats
  • 1/2 cup almonds (roughly chopped)
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/2 cup sultanas
  • 3/4 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 2 tbsp mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 160°C (325°F).
  2. Line an 8-inch square baking tin with baking paper.
  3. Spread oats, almonds, and pepitas on a baking tray and toast for 10 minutes.
  4. Transfer to a bowl, then add sultanas, cinnamon, and salt.
  5. Warm honey and peanut butter together for 30 seconds in a microwave-safe jug.
  6. Mix until smooth, then pour over the oat mixture and stir to coat.
  7. Press the mixture into the lined tin and sprinkle chocolate chips on top if desired.
  8. Cover with baking paper and press down again.
  9. Refrigerate for 1 hour or until firm.
  10. Lift out, cut into 10 bars, and arrange on a tray.
  11. For a golden top, bake at 160°C for 25 minutes.
  12. Cool completely before storing in an airtight container.

Notes

These bars can be frozen individually for a quick snack and reheated in the microwave if desired.
