Description
Chewy and nutty peanut butter oat bars that evoke nostalgia and are perfect for snacking.
Ingredients

- 1/4 cup honey
- 1/4 cup natural peanut butter
- 1 1/2 cups rolled oats
- 1/2 cup almonds (roughly chopped)
- 1/4 cup pepitas (pumpkin seeds)
- 1/2 cup sultanas
- 3/4 tsp ground cinnamon
- 1/4 tsp kosher salt
- 2 tbsp mini chocolate chips (optional)
Instructions
- Preheat your oven to 160°C (325°F).
- Line an 8-inch square baking tin with baking paper.
- Spread oats, almonds, and pepitas on a baking tray and toast for 10 minutes.
- Transfer to a bowl, then add sultanas, cinnamon, and salt.
- Warm honey and peanut butter together for 30 seconds in a microwave-safe jug.
- Mix until smooth, then pour over the oat mixture and stir to coat.
- Press the mixture into the lined tin and sprinkle chocolate chips on top if desired.
- Cover with baking paper and press down again.
- Refrigerate for 1 hour or until firm.
- Lift out, cut into 10 bars, and arrange on a tray.
- For a golden top, bake at 160°C for 25 minutes.
- Cool completely before storing in an airtight container.
Notes
These bars can be frozen individually for a quick snack and reheated in the microwave if desired.
