Experience the vibrant flavors of Peru with this succulent chicken dish paired with zesty aji verde sauce and fluffy cilantro rice.


Ingredients

  • 4 Chicken Breasts
  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Cumin
  • Salt and Pepper to Taste
  • 1 Cup Cilantro Leaves
  • 1 Jalapeño (Seeded, if desired)
  • 1 Clove Garlic
  • 1 Lime (Juiced)
  • 1 Cup White Rice
  • 2 Cups Chicken Broth
  • 1/2 Cup Chopped Cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with olive oil, cumin, salt, and pepper.
  3. Place the chicken in a baking dish and bake for 25-30 minutes until cooked through.
  4. In a blender, combine cilantro leaves, jalapeño, garlic, lime juice, and a pinch of salt, blending until smooth.
  5. Rinse the rice under cold water, then add it to a pot with chicken broth and bring to a boil; cover and simmer for 15 minutes.
  6. Stir in chopped cilantro to the cooked rice.
  7. Serve the chicken on a bed of cilantro rice, drizzling with aji verde sauce.

Notes

For deeper flavor, marinate the chicken in the olive oil mixture for a few hours prior. You can add vegetables to the rice for variety.
