- 4 Chicken Breasts
- 2 Tablespoons Olive Oil
- 1 Teaspoon Cumin
- Salt and Pepper to Taste
- 1 Cup Cilantro Leaves
- 1 Jalapeño (Seeded, if desired)
- 1 Clove Garlic
- 1 Lime (Juiced)
- 1 Cup White Rice
- 2 Cups Chicken Broth
- 1/2 Cup Chopped Cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with olive oil, cumin, salt, and pepper.
- Place the chicken in a baking dish and bake for 25-30 minutes until cooked through.
- In a blender, combine cilantro leaves, jalapeño, garlic, lime juice, and a pinch of salt, blending until smooth.
- Rinse the rice under cold water, then add it to a pot with chicken broth and bring to a boil; cover and simmer for 15 minutes.
- Stir in chopped cilantro to the cooked rice.
- Serve the chicken on a bed of cilantro rice, drizzling with aji verde sauce.
Notes
For deeper flavor, marinate the chicken in the olive oil mixture for a few hours prior. You can add vegetables to the rice for variety.
