A refreshing tropical drink combining the sweetness of pineapple with the tang of lemon, perfect for hot days and gatherings.
Ingredients

- 2 cups fresh pineapple chunks
- 1/3 cup fresh lemon juice
- 1/4 cup cucumber juice (or 1/2 cucumber, peeled)
- 2 tbsp fresh lime juice
- 1 tbsp fresh ginger juice (or 1 tsp grated ginger)
- 2 cups coconut water
- 1–2 tbsp raw honey (optional, to taste)
- 1/4 cup fresh mint leaves
- 2 cups ice cubes
- Sparkling water (for topping, optional)
Instructions
- Prep your ingredients: Wash, peel, and chop the fresh pineapple into chunks and the cucumber if you’re using a whole one.
- Juice your limes and lemons: Squeeze out every drop.
- Grate or juice the ginger: Add it to the mixture.
- Muddle the mint leaves: Gently press the mint leaves in a pitcher.
- Blend it up: Combine pineapple, cucumber, coconut water, and muddled mint in a blender until smooth.
- Add the citrus: Pour in lemon juice, lime juice, and ginger, then blend briefly.
- Strain and chill: Pour through a fine mesh strainer into a pitcher and chill for at least 30 minutes.
- Serve it up: Serve the chilled drink in glasses with ice cubes and top with sparkling water. Garnish as desired.
Notes
Chill the drink for at least 30 minutes for the best flavor. Can be customized with different sweeteners or additional spices.
