- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar (packed)
- 2 large eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup chopped pistachios
- 1 cup white chocolate chips
- ½ cup crushed pistachios (for garnish)
- 1 teaspoon sea salt (to sprinkle on top)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture until just combined.
- Fold in the chopped pistachios gently.
- Spread the dough into the prepared baking dish evenly.
- Bake for 25-30 minutes, or until golden brown and a toothpick comes out clean.
- Remove from the oven and sprinkle white chocolate chips on top, allowing them to melt slightly. Spread melted chocolate evenly.
- Garnish with crushed pistachios and sea salt. Let cool for 30 minutes before slicing.
- Slice into squares and serve.
Notes
Allow bars to cool completely before cutting for cleaner edges. You can store leftovers in an airtight container.
