- Pinch of ground cinnamon
- Crushed almonds
Instructions
- In a mason jar or sealable container, whisk together the almond milk, chia seeds, maple syrup, pumpkin puree, pumpkin pie spice, and vanilla extract until thoroughly mixed.
- Let the mixture stand for 5 minutes, then stir again to redistribute the chia seeds.
- Seal the container and refrigerate for a minimum of 2 hours to allow the pudding to thicken.
- Before serving, top with Greek yogurt, sprinkle with cinnamon, and add crushed almonds.
Notes
Whisk thoroughly to prevent clumping. Adjust sweetness with more maple syrup if desired. Can be made the night before for convenience.
