- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 3/4 cup canned pumpkin puree
- 2 large eggs
- 1/4 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.
- In another bowl, whisk together the pumpkin puree, eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 1 hour.
- On a floured surface, roll out the dough to about 1/2-inch thickness. Use a donut cutter to cut out donut shapes.
- Heat vegetable oil in a deep fryer or a large, heavy pot to 365°F (185°C).
- Fry the donuts in batches, about 2-3 minutes per side, until golden brown.
- Remove the donuts from the oil and drain on paper towels. Optionally, sprinkle with cinnamon sugar or glaze with a mixture of powdered sugar and milk.
Notes
These donuts can be stored in an airtight container or frozen for later enjoyment. Reheat in the oven for best results.
