- 1 pound boneless chicken breast or thighs
- 6 cups chicken broth

- 1 teaspoon salt
- ½ teaspoon black pepper
- ¾ cup milk
- 2 tablespoons fresh parsley, chopped
Instructions
- Melt 2 tablespoons of butter in a large pot over medium heat. Add chopped onion, sliced carrots, and celery; stir until softened, about 5-7 minutes.
- Add minced garlic and cook for about a minute. Then, add 1 pound of boneless chicken and lightly sear for about 5 minutes.
- Pour in 6 cups of chicken broth and bring to a gentle simmer for another 5 minutes.
- In a separate bowl, mix 2 cups of all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and ½ teaspoon black pepper. Gradually stir in ¾ cup milk until a soft dough forms.
- Drop spoonfuls of the dough into the simmering broth.
- Cover the pot and let dumplings steam in broth for about 15 minutes.
- Remove chicken, shred it, and return it to the pot with dumplings and broth.
- Adjust seasoning and stir in fresh chopped parsley.
Notes
Consider using rotisserie chicken for a quicker option or add peas/corn for extra texture.
