A delightful sourdough flatbread with a fluffy center and lightly charred exterior, perfect for any meal.
Ingredients

- 1/3 cup active sourdough starter
- 2 1/4 cups all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp salt
- 3 tbsp Greek yogurt, sour cream, or ricotta cheese
- 2 tbsp olive oil
- 1/2 cup whole milk
Instructions
- In a large bowl, combine your active sourdough starter, all-purpose flour, granulated sugar, salt, Greek yogurt, olive oil, and whole milk.
- Mix until no dry streaks remain; the dough should be slightly sticky.
- If the dough is too wet, add more flour one tablespoon at a time until manageable.
- Cover with a damp tea towel and let it rise for about 8 hours until doubled in size.
- Turn the dough onto a floured surface and divide it into 8 equal pieces.
- Shape each piece into a smooth ball.
- Preheat a cast iron skillet over medium-high heat.
- Roll out one ball into a 1/4-inch thick disk.
- Cook in the skillet for 1-2 minutes until bubbles form and charred spots appear.
- Flip and cook the other side for another 1-2 minutes.
- Transfer to a wire rack and repeat with remaining dough.
Notes
Serve warm and covered with a tea towel to retain heat. Experiment with flavors by adding herbs or spices to the dough.
