Description

A delightful treat that combines creamy cheesecake with tart raspberries, wrapped in flaky pastry.

Ingredients

Scale
  • 1 package of puff pastry sheets
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry sheets and cut them into squares or rectangles.
  3. Mix cream cheese, powdered sugar, and vanilla extract in a bowl until smooth.
  4. Place a spoonful of the mixture in the center of each pastry square and top with fresh raspberries.
  5. Fold the corners of the pastry over the filling to shape.
  6. Beat the egg with milk and brush over the pastries.
  7. Place on a baking sheet and bake for 15-20 minutes until golden and flaky.
  8. Remove from oven and let cool slightly before serving.

Notes

Use cold ingredients for a flakier texture and consider adding zest for extra flavor.
