- 1 cup all-purpose flour
- 1 cup old-fashioned oats
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon baking soda
- 1/8 teaspoon kosher salt
- 1/2 cup unsalted butter, melted
- 3/4 cup raspberry jam
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking dish with parchment paper.
- In a medium bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir to mix thoroughly.
- Pour melted butter over the mixture and mix until crumbly.
- Press 2/3 of the oat mixture into the bottom of the lined pan.
- Spread raspberry jam evenly over the crust.
- Sprinkle the remaining oat mixture over the jam.
- Bake for 30-35 minutes or until edges are golden brown.
- Allow to cool before cutting into squares and serving.
Notes
Serve warm with vanilla ice cream or topped with whipped cream for an elegant touch.
