Description

Delightful roasted cherry tomatoes bursting with flavor and aroma, perfect as an appetizer or side dish.


Ingredients

  • 1.5 lbs cherry tomatoes, rinsed and dried
  • 2.5 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp minced garlic
  • 0.75 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 1 tsp fresh thyme leaves
  • 0.25 tsp red pepper flakes
  • 2 tbsp fresh basil, chopped
  • 2 tbsp finely grated Parmesan (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cherry tomatoes with olive oil, balsamic vinegar, minced garlic, salt, black pepper, thyme, and red pepper flakes.
  3. Spread the tomatoes evenly on a parchment-lined baking sheet and roast for 25 minutes or until skins blister and caramelize.
  4. Remove from oven and garnish with chopped basil and grated Parmesan, if desired.
  5. Transfer to a serving platter and enjoy.
