- 1.5 lbs cherry tomatoes, rinsed and dried
- 2.5 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar
- 2 tsp minced garlic
- 0.75 tsp kosher salt
- 0.5 tsp freshly ground black pepper
- 1 tsp fresh thyme leaves
- 0.25 tsp red pepper flakes
- 2 tbsp fresh basil, chopped
- 2 tbsp finely grated Parmesan (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine cherry tomatoes with olive oil, balsamic vinegar, minced garlic, salt, black pepper, thyme, and red pepper flakes.
- Spread the tomatoes evenly on a parchment-lined baking sheet and roast for 25 minutes or until skins blister and caramelize.
- Remove from oven and garnish with chopped basil and grated Parmesan, if desired.
- Transfer to a serving platter and enjoy.
