Description

Creamy and aromatic mashed potatoes infused with rosemary and garlic, a perfect comfort food side dish.


Ingredients

  • 2 pounds Yukon gold potatoes
  • 3 cloves of garlic, minced
  • 2 sprigs of fresh rosemary
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream
  • ½ teaspoon kosher salt
  • 1 tablespoon salt for cooking potatoes
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the Potatoes: Wash the Yukon gold potatoes and chop into 1-inch cubes. Place in a pot with cold water and 1 tablespoon of salt. Bring to a boil and then simmer until fork-tender, about 15-20 minutes.
  2. Infuse the Cream: In a saucepan, combine heavy cream and butter over medium heat. Add minced garlic and rosemary; let it infuse for about 10 minutes.
  3. Combine and Mash: Drain the potatoes and return them to the pot. Mash until smooth and creamy.
  4. Mix in the Cream: Slowly pour in the warm cream and butter mixture, stirring gently to combine.
  5. Season to Perfection: Taste and adjust seasoning with kosher salt and black pepper.
  6. Serve and Garnish: Serve hot, garnished with a sprig of rosemary and a pat of butter on top.

Notes

For extra flavor, consider adding grated Parmesan cheese or roasted garlic.
