- 2 pounds Yukon gold potatoes
- 3 cloves of garlic, minced
- 2 sprigs of fresh rosemary
- 4 tablespoons unsalted butter
- ½ cup heavy cream
- ½ teaspoon kosher salt
- 1 tablespoon salt for cooking potatoes
- ¼ teaspoon black pepper
Instructions
- Prepare the Potatoes: Wash the Yukon gold potatoes and chop into 1-inch cubes. Place in a pot with cold water and 1 tablespoon of salt. Bring to a boil and then simmer until fork-tender, about 15-20 minutes.
- Infuse the Cream: In a saucepan, combine heavy cream and butter over medium heat. Add minced garlic and rosemary; let it infuse for about 10 minutes.
- Combine and Mash: Drain the potatoes and return them to the pot. Mash until smooth and creamy.
- Mix in the Cream: Slowly pour in the warm cream and butter mixture, stirring gently to combine.
- Season to Perfection: Taste and adjust seasoning with kosher salt and black pepper.
- Serve and Garnish: Serve hot, garnished with a sprig of rosemary and a pat of butter on top.
Notes
For extra flavor, consider adding grated Parmesan cheese or roasted garlic.
