Description
A warm and nourishing soup combining tender rotisserie chicken with earthy mushrooms, fresh vegetables, and aromatic herbs.

- 1 rotisserie chicken, shredded
- 2 cups mushrooms, sliced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, add the olive oil. Once hot, toss in the diced onion, carrots, and celery. Sauté for about 5 minutes until they become tender and aromatic.
- Next, add the sliced mushrooms and minced garlic to the pot. Stir them in and cook for an additional 3 minutes.
- Pour the chicken broth into the pot and bring the mixture to a boil.
- Once boiling, stir in the shredded rotisserie chicken along with the dried thyme, salt, and pepper.
- Reduce the heat, allowing the pot to simmer gently for 15-20 minutes.
- Ladle the soup into bowls and garnish with freshly chopped parsley before serving.
Notes
Add a splash of lemon juice before serving for brightness. You can also substitute vegetables as desired.
