Description

A warm and nourishing soup combining tender rotisserie chicken with earthy mushrooms, fresh vegetables, and aromatic herbs.


Ingredients

Scale
  • 1 rotisserie chicken, shredded
  • 2 cups mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, add the olive oil. Once hot, toss in the diced onion, carrots, and celery. Sauté for about 5 minutes until they become tender and aromatic.
  2. Next, add the sliced mushrooms and minced garlic to the pot. Stir them in and cook for an additional 3 minutes.
  3. Pour the chicken broth into the pot and bring the mixture to a boil.
  4. Once boiling, stir in the shredded rotisserie chicken along with the dried thyme, salt, and pepper.
  5. Reduce the heat, allowing the pot to simmer gently for 15-20 minutes.
  6. Ladle the soup into bowls and garnish with freshly chopped parsley before serving.

Notes

Add a splash of lemon juice before serving for brightness. You can also substitute vegetables as desired.
