Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 3 cups peeled and sliced apples
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 cup granulated sugar (for caramel)
  • 6 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 tsp sea salt (for caramel)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined.
  3. Press the crumb mixture into the bottom of a 9-inch springform pan.
  4. Bake the crust for about 10 minutes until golden brown, then let it cool.
  5. In a large bowl, combine sliced apples, brown sugar, cinnamon, and flour; toss until well coated.
  6. Spread the apple mixture evenly over the cooled crust.
  7. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth.
  8. Add the eggs one at a time, mixing well after each addition.
  9. Mix in the vanilla extract and sour cream until smooth.
  10. Pour the cheesecake filling over the apple layer.
  11. Bake the cheesecake for approximately 60-70 minutes until the center is set yet slightly jiggly.
  12. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  13. For salted caramel, heat the sugar in a saucepan over medium heat until melted and amber.
  14. Remove from heat, add unsalted butter, and stir until melted.
  15. Gradually add heavy cream while stirring until smooth, then stir in sea salt.
  16. Drizzle the salted caramel over the chilled cheesecake before serving.

Notes

Use a hot knife to cut slices for cleaner cuts. Garnish with chopped nuts or different spices for a unique twist.
