Ingredients

  • 1/2 cup walnuts or pecans (optional)
  • 1 tsp flaky sea salt
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Prepare the caramel: In a saucepan, combine sugar and water, heating until amber; whisk in butter and cool.
  2. Create the cookie base: Mix oats, flour, baking powder, and salt; cream butter and dark brown sugar, then add eggs and vanilla, and fold in dry ingredients.
  3. Layer components: Pre-bake cookie layer, add chocolate chips and caramel, then top with remaining dough.
