- 2 cups quick oats
- 1 cup dark brown sugar
- 1 cup semisweet chocolate chips
- 1/2 cup dark chocolate chips
- 1/2 cup walnuts or pecans (optional)
- 1 tsp flaky sea salt
- 1/2 cup butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Prepare the caramel: In a saucepan, combine sugar and water, heating until amber; whisk in butter and cool.
- Create the cookie base: Mix oats, flour, baking powder, and salt; cream butter and dark brown sugar, then add eggs and vanilla, and fold in dry ingredients.
- Layer components: Pre-bake cookie layer, add chocolate chips and caramel, then top with remaining dough.
- Bake to perfection: Bake until edges are golden and center is set, about 20-25 minutes.
- Cool and cut into squares, store or freeze as desired.
