Ingredients

  • 2 cups + 3 tbsp all-purpose flour, spooned & leveled
  • 1/2 cup light brown sugar, packed
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup pure maple syrup
  • 3 tbsp heavy cream, at room temperature
  • 2 large eggs, at room temperature
  • 3 1/4 cups pecan halves
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 1/2 cup cold heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Flaky sea salt, for topping
  • Ice cream, optional for serving

Instructions

  1. Preheat your oven to 350℉ (175℃) and prepare a 9×13-inch baking pan with cooking spray and parchment paper.
  2. In a medium bowl, melt butter and mix in flour, brown sugar, cinnamon, and salt until crumbly. Press into the pan and bake for 18-20 minutes.
  3. In a separate bowl, beat eggs. In a saucepan, combine butter, maple syrup, brown sugar, and heavy cream; heat until melted and gently boiling.
  4. Temper the eggs by whisking in a little of the hot mixture, then mix back into the saucepan. Stir in pecans, salt, vanilla extract, and cinnamon; pour over the crust.
  5. Bake for 28-34 minutes until set; let cool completely before slicing.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form, then serve bars with whipped cream and ice cream if desired.

Use room temperature ingredients for best results. Ensure to pre-bake the crust to avoid sogginess.
