- 1 pound breakfast sausage
- 6 large eggs
- 1 cup shredded cheese
- 1 cup milk
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ teaspoon pepper
- Optional: chopped vegetables (bell peppers, onions, etc.)
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- Cook the sausage in a skillet over medium heat until browned; let cool slightly.
- In a large bowl, whisk together the eggs and milk.
- Stir in the sausage, cheese, flour, baking powder, salt, and pepper (and any vegetables if using). Mix until combined.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes until muffins are golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving warm.
Notes
For enhanced flavor, sauté vegetables before adding them to the batter. Store in an airtight container for up to three days.
