Description

Delicious muffins combining savory breakfast sausage, fluffy texture, eggs, and cheese for a hearty meal.


Ingredients

  • 1 pound breakfast sausage
  • 6 large eggs
  • 1 cup shredded cheese
  • 1 cup milk
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Optional: chopped vegetables (bell peppers, onions, etc.)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Cook the sausage in a skillet over medium heat until browned; let cool slightly.
  3. In a large bowl, whisk together the eggs and milk.
  4. Stir in the sausage, cheese, flour, baking powder, salt, and pepper (and any vegetables if using). Mix until combined.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes until muffins are golden brown and a toothpick comes out clean.
  7. Allow to cool slightly before serving warm.

Notes

For enhanced flavor, sauté vegetables before adding them to the batter. Store in an airtight container for up to three days.
