A comforting and flavorful dish featuring savory sausage paired with sweet bell peppers and onions, perfect for a weeknight dinner.
Ingredients

- 1 pound sweet or hot Italian sausage links
- 3 assorted bell peppers, seeded and cut into slices (3/4–1 inch thick)
- 1 large red onion, sliced (3/4–1 inch thick)
- 1/2 large sweet onion, sliced (3/4–1 inch thick)
- 1 clove garlic, minced or sliced
- 1 tablespoon grapeseed oil or similar
- Salt and black pepper to taste
Instructions
- Preheat your oven to 425 degrees F and place a sheet pan inside while it preheats.
- Carefully remove the hot sheet pan and arrange the sliced peppers and onions on it.
- Drizzle with grapeseed oil and toss to coat.
- Add minced garlic and season with salt and pepper.
- Nestle the sausage links among the veggies.
- Bake for 30 minutes, flipping the sausages and stirring the veggies halfway through.
- Continue baking for another 15 minutes and serve hot.
- For the Dutch oven method, preheat the oven to 350 degrees F.
- Sear the sausages in a large oven-safe pan over medium heat for 3-4 minutes on each side, then set aside.
- In the same pan, add remaining oil and sauté peppers and onions for 10-12 minutes.
- Add garlic and return sausages to the pan, cover, and bake for 1 hour, stirring halfway through.
- Serve warm.
Notes
Can be served over rice, with bread, or topped with melting cheese. Store leftovers in airtight containers.
