Description

A comforting and flavorful dish featuring savory sausage paired with sweet bell peppers and onions, perfect for a weeknight dinner.


Ingredients

Scale
  • 1 pound sweet or hot Italian sausage links
  • 3 assorted bell peppers, seeded and cut into slices (3/41 inch thick)
  • 1 large red onion, sliced (3/41 inch thick)
  • 1/2 large sweet onion, sliced (3/41 inch thick)
  • 1 clove garlic, minced or sliced
  • 1 tablespoon grapeseed oil or similar
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425 degrees F and place a sheet pan inside while it preheats.
  2. Carefully remove the hot sheet pan and arrange the sliced peppers and onions on it.
  3. Drizzle with grapeseed oil and toss to coat.
  4. Add minced garlic and season with salt and pepper.
  5. Nestle the sausage links among the veggies.
  6. Bake for 30 minutes, flipping the sausages and stirring the veggies halfway through.
  7. Continue baking for another 15 minutes and serve hot.
  8. For the Dutch oven method, preheat the oven to 350 degrees F.
  9. Sear the sausages in a large oven-safe pan over medium heat for 3-4 minutes on each side, then set aside.
  10. In the same pan, add remaining oil and sauté peppers and onions for 10-12 minutes.
  11. Add garlic and return sausages to the pan, cover, and bake for 1 hour, stirring halfway through.
  12. Serve warm.

Notes

Can be served over rice, with bread, or topped with melting cheese. Store leftovers in airtight containers.
