Description

A delightful Italian appetizer featuring grilled bread topped with a vibrant mixture of ripe tomatoes, fresh basil, and balsamic glaze.


Ingredients

  • 1 French baguette or Italian ciabatta loaf
  • 2 cups ripe tomatoes, diced
  • 2 cloves fresh garlic, minced
  • 1/4 cup fresh basil leaves, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon balsamic glaze
  • Optional: grated Parmesan cheese for topping

Instructions

  1. Preheat your grill to medium heat.
  2. In a medium mixing bowl, combine tomatoes, garlic, basil, olive oil, salt, pepper, and balsamic glaze. Stir to combine and let it marinate for at least 15-20 minutes.
  3. Slice the bread into about 12 pieces, each 1/2 inch thick, and brush both sides with olive oil.
  4. Grill the bread slices for 2-4 minutes on each side until golden brown.
  5. Remove the grilled bread and let it cool slightly.
  6. Top each slice generously with the tomato mixture.
  7. Sprinkle with grated Parmesan cheese if desired and drizzle with additional balsamic glaze before serving.
  8. Serve immediately while warm.

Notes

For best results, use ripe tomatoes and do not skip the marination step.
