- 1 French baguette or Italian ciabatta loaf
- 2 cups ripe tomatoes, diced
- 2 cloves fresh garlic, minced
- 1/4 cup fresh basil leaves, finely chopped
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 tablespoon balsamic glaze
- Optional: grated Parmesan cheese for topping
Instructions
- Preheat your grill to medium heat.
- In a medium mixing bowl, combine tomatoes, garlic, basil, olive oil, salt, pepper, and balsamic glaze. Stir to combine and let it marinate for at least 15-20 minutes.
- Slice the bread into about 12 pieces, each 1/2 inch thick, and brush both sides with olive oil.
- Grill the bread slices for 2-4 minutes on each side until golden brown.
- Remove the grilled bread and let it cool slightly.
- Top each slice generously with the tomato mixture.
- Sprinkle with grated Parmesan cheese if desired and drizzle with additional balsamic glaze before serving.
- Serve immediately while warm.
Notes
For best results, use ripe tomatoes and do not skip the marination step.
