A vibrant dish of spaghetti coated in a spicy Creole sauce, perfect for weeknights or special gatherings.
Ingredients

- 1 lb spaghetti
- 2 tbsp vegetable oil
- 1 small onion, finely chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 Scotch bonnet pepper, minced (optional)
- 1 lb smoked sausage or hot dogs, sliced
- 2 cups diced tomatoes (canned or fresh)
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp sugar
- Salt and pepper to taste
- 1/2 cup chicken broth or water
- 2 tbsp freshly chopped parsley for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- Heat vegetable oil in a large skillet over medium heat. Add chopped onions and bell peppers; sauté for about 3 minutes.
- Add garlic and Scotch bonnet pepper; stir for an additional minute.
- Add sliced sausage or hot dogs and cook until browned, about 5 minutes.
- Stir in diced tomatoes, tomato paste, thyme, parsley, onion powder, garlic powder, paprika, sugar, salt, and pepper.
- Pour in chicken broth or water and let simmer for 10-15 minutes.
- Add cooked spaghetti to the sauce, tossing until pasta is well coated.
- Let cook in sauce for an additional 2-3 minutes.
- Remove from heat and garnish with parsley. Serve hot with grated Parmesan cheese if desired.
Notes
For a lighter version, use whole grain spaghetti or turkey sausage. Adjust spice level to taste.
