Description

A vibrant dish of spaghetti coated in a spicy Creole sauce, perfect for weeknights or special gatherings.


Ingredients

  • 1 lb spaghetti
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 Scotch bonnet pepper, minced (optional)
  • 1 lb smoked sausage or hot dogs, sliced
  • 2 cups diced tomatoes (canned or fresh)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1/2 cup chicken broth or water
  • 2 tbsp freshly chopped parsley for garnish
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat vegetable oil in a large skillet over medium heat. Add chopped onions and bell peppers; sauté for about 3 minutes.
  3. Add garlic and Scotch bonnet pepper; stir for an additional minute.
  4. Add sliced sausage or hot dogs and cook until browned, about 5 minutes.
  5. Stir in diced tomatoes, tomato paste, thyme, parsley, onion powder, garlic powder, paprika, sugar, salt, and pepper.
  6. Pour in chicken broth or water and let simmer for 10-15 minutes.
  7. Add cooked spaghetti to the sauce, tossing until pasta is well coated.
  8. Let cook in sauce for an additional 2-3 minutes.
  9. Remove from heat and garnish with parsley. Serve hot with grated Parmesan cheese if desired.

Notes

For a lighter version, use whole grain spaghetti or turkey sausage. Adjust spice level to taste.
